These cake rolls are really versatile, as well as surprisingly easy and quick to put together. I’m going to use this recipe to show you the basic method, then you can go to town and customize it however you like. The one above is packed with peppermint ice cream, and I served with a hot fudge sauce. You can adjust the proportion of cake to filling, mine is slightly overstuffed but I was going for something cold and refreshing.
I have filled these with chestnut ganache for yule logs, filled them with ice cream, jam, mousse, you name it! As long it will firm up enough to slice it’s fair game.

I love champagne, there I’ve said it.
Maybe it’s clichéd, lady in her mid 30’s loving champagne, but it’s quite hard to find a bad champagne. Don’t get me wrong there are some average ones out there, but hardly any I’d class as bad. Plus it’s so celebratory drinking it. Perfect for so many occasions, catching up with friends, tick, enjoying pre dinner drinks, tick, Christmas day drinks, tick.
Last year before Christmas I became obsessed with the idea of making champagne ice cream. I had it in my head would go well with Christmas pudding. So after a fair few attempts (some ending in scrambled eggs) I made a good batch, taste tested it on my work colleagues, then made some for Christmas day, where I served it up with the Christmas pudding and……..
It went amazingly well with Christmas pudding.

Firstly – an apology for the lack of photos with this post. I’ve been baking like a mad woman in the last few weeks for various Christmas-related events and even though I intend to photograph as I go for my blog it hasn’t turned out this way.
First up, a super easy Christmas ice cream pudding that I’ve been making for many, many years. I have no idea where the original recipe comes from but it is embarrassingly easy.
This is so simple and a perfect dessert for Christmas Day in Sydney, which is, without fail, a squillion degrees. I made nine desserts for my mother-in-law’s Christmas lunch on the weekend and this was the first thing to vanish.
2 litres best quality vanilla ice cream, softened
1 cup mixture of sultanas, currants and raisins
Good splash of rum
¼ cup glace cherries, chopped
2 tablespoons cinnamon
